Johan, a fifth-generation coffee producer at the historic Monteverde farm, decided to establish the La Esmeralda processing center in 2018. His goal was to provide better prices for local producers. His vision included purchasing coffee cherries and implementing rigorous fermentation protocols to create larger volume batches with consistent cup profiles. Additionally, he aimed to elevate the international recognition of the high-quality coffee produced in the region.
Process: At this farm the pickers make a manual recollection, selecting only the mature beans, afterwards the coffee is left in cherries (natural) 24 hours for a dry fermentation for and after that they move the coffee to undergo water fermentation in a sealed tank for another 24 hours, ensuring a controlled, closed environment. Finally, the beans go through fermentation with leachate enriched with microorganisms native to the farm for an additional 24 hours, allowing unique and characteristic flavor profiles of the local terroir to develop.
After fermentation, the coffee is dried. First, the beans are dried for 12 days on raised beds, a traditional method that ensures uniform drying thanks to sun exposure and proper ventilation. Finally, the beans are finished drying for 3 days in a silo, ensuring they reach the optimal moisture level and are ready for storage and further processing.
